Definately find out what's included, especially VAT as lots of caterers leave this off their prices at the initial stage to make their prices look more attractive.
Check who will be there on the day - i.e. is it the people you are meeting or someone else that works for the company? It is helpful to have a good rapport with whoever will be there as they will be providing about the biggest (apart from the vicar/registrar that is!) service of the entire day, and you want it to go smoothly.
A good caterer will want to visit the venue if it is one that they have ot used before to check for space and services, and many are happy for you to sample a selection of their dishes at some point too, which is useful.
Lastly, watch out for any hidden charges, such as corkage, linen hire charges if tablecloths etc are to be left in situ for the evening do, and such like.
