What sort of reception do you actually want? Formal, slightly informal, etc?
It's been years since I was in the Slieve Donard, so I don't know how it's set up for weddings etc.
Do you want a formal top table, or something more intimate? Do they permit you to bring your own alcohol in, and charge you corkage? Do they have some sort of event co-ordinator who will be in charge on the day?
Do they have more than one room for the reception - and if so which one would you prefer? Ideally there should also be a bar within the reception room so the guests don't have to keep trailing in and out of the room.
Do you know what sort of food there is on offer? And the prices? Can you negotiate on that at all - hotels in England are more flexible we found, but it's still worth asking. We had a hot buffet, for less money than the standard meal, and everyone got their own food...

Does you know what sort of evening entertainment you'd like? Do you want to to source something yourself, or will the Slieve Donard provide it? (Again check the costs!)
Will they have a room you can leave the presents in, and perhaps get changed? Will they do the table decorations?
I know this is an awful lot to take in, so I'll leave it there for now, and come back to it when I've thought some more
