I am in similar predicament as you, I am not sure if there are any vegetarians amongst the guests, but would like to have a vegetarian option for everyone to have.
So ideas please!!

We are having a buffet as we are getting married lateish and it will merge with the evening (thus saving cash ).
We've taken the standard buffet menu our venue has for business-type functions and added a few bits a pieces we fancied and we've made sure there are a few things that any veggies who sneak in can eat. There's a vegetable pasta dish, mozzarella carroza (mozzarella cheese folded in bread and deep fried, its an Italian themed buffet), salad and baby new potatoes. We're not expecting any veggies but best to be safe than sorry!
Lots of 'veggies' eat fish so salmon might help, a cheese board is un sloppy. Samosas and spring rolls are easy to eat. Most salads are veggie, veggie pizza...hmmm I'll have a think...

Quick search on SAinsburys...
Feta and onion tartlets (bit more modern than quiche...)
Raost veggies
Veggie fritters/ onion bhajis
Onion rings
Tapenade Bruschetta
Fajitas/ Tacos
Stuffed mushies (Brie/ feta/ blue cheese (although life's too short...)
Baby jacket potatoes with sour crime and chive (had these at my gran's "wake" - bit morbid but they were yummy)
Hummus etc w tortillas and pitta
Cheese on toast - spice it up a bit - tobasco or worcester sauce and it's not so bad cold!
Courgette and pesto kebabs (had these at a work do and they were scrummy)
Tempura vegetacles
Sushi
.....
And that was only through A - M!!!
There's tonnes of things.. keep looking...

Here are my fave buffet nibbles.... mini spring rolls, pizza slices, sausage rolls (can buy Linda McCartney and cut them to nibble size), veg samosas, cheese & onion/mushroom quiche, cheese & pineapple (as long as the cheese is veggie i.e. no cows intestines ), onion bhajis, twiglets, nuts, crisps etc.
For a hot fork buffet, chilli and rice goes down well, veg curry, spaghetti bolognese but that can get messy, jacket with cheese &/or beans, pizza, quiche, sausage & mash (a la Kate Winslet!), veg kiev.
Give me a shout if you need any advice, I've been veggie for about 13 years now.

I hope that my child, looking back on today
Will remember a mother who had time to play;
Because children grow up while you're not looking,
There are years ahead for cleaning and cooking.
So, quiet now cobwebs go to sleep.

It's probably a good idea to have a few things that don't contain cheese or egg, as you might find some veggies don't eat those... I've been veggie for 9 years or so, and it's nice when people make the effort to provide something really interesting to eat without meat in. And I've also never met a veggie that eats fish - nothing with a face seems to be a good guidleline!
Sorry...
Can I just add my bit, as a veggie for 15 odd years (except a slight slipup when I was uni-bacon sarnies-mmmmm!!!)
One headache for a veggie is having to ask what things are! So I'd suggest labelling anything thats vegetarian (even just a cocktail stick with a 'V' marked helps) & then you'll know they'll get eaten!
I'd go for vol-o-vent styley things with say cream cheese & chives, or tomato salsa. Slices of cheese & pizza always go down well, and if you're catering yourselves there are always lots of things in M&S (pricey maybe?)
Dont worry too much about it though, we get used to being pain-in-the-butts!!!

My little ginger man speaks spanish!!
THANKS EVERYONE......
I have a good idea now of what to provide, its mainly a hot BBQ type of buffet so i think i'm going to get some veggie burgers and sausages and baked potatoes, cold past a salads, quiche and spring rolls.. I have found a very usefull gadget for marking veggie dishes in Lakeland Plastics, plate markers whick clip onto the side of the container and then you can write on them what they are!!!
So never fear i shall be a ble to feed the starving thousands!!!!!!!
HEH everyone 80 days to go
Caz.
